Meal ideas for IVF

My husband and I are generally rubbish at meal planning but find it stressful during ivf. I had a FET today and I'm trying to think of some low carb meal or just healthy meal ideas for the next couple of weeks. Has anyone got any favourites they'd share? Thank you

You can make really healthy (veg) curries or chili especially, if you eat them with potatoes (c. 200 gr cooked) rather than rice and avoid using any oil. E.g. passata as base, roasted peppers & carrots, in case of curry - lentils and chickpeas, in case of chili - sweet potato and kidney beans, some garlic and of course lots of spices (lime optional). Only takes about 20-30 mins to cook, and can make that for 2-3 days at a time if you want. Has carbs ofc but should be between 600-800 calories if you have a dinner-sized portion, less if you just want a small bowl for lunch. Good luck!

Second chickpeas! Tomatoes/Passata and onions as base, canned chickpeas and any spices you like! Quick filling and healthy. Can do a similar thing with lentils or 'tarka daal' where you cook the lentils then fry onions and whole spices and add them right at the end. Maybe stir fry but with less noodles and more veg, grilled fish/chicken (if not veggie!) with roast veg. xx

You can buy bags of frozen cauliflower “rice” - it’s brilliant and so easy. I make a kind of low carb paella using it instead of rice (cook chorizo, diced chicken, onions, red peppers, add the cauliflower rice, sprinkle with chopped coriander at the end and squeeze lemon on top) - really good.

Whatever veg you have in fridge can sling it chopped up on a tray, chicken thighs / sausages or salmon on top, seasonings and oven roast. No mess and easy.

I live a low carb life and I love making omelettes quick. I throw anything in the fridge in mine...broccoli, tomatoes, onions, beetroot, feta, asparagus!
