so not the cooling rack then but the oven rack. Now that's strange, isn't it? Why would a victoria sponge which is in a TIN have indentations from the oven rack?

of course everybody knows one doesn't put cake directly on the rack to cool, it must be cushioned with a tasteful tea towel.

Do you get marked down if the teatowel is not tasteful?

I would be able to tell if someone had put their tops on a grill thingy, sadly most people do. Yeuch.

What you do is get them off the hot tin asap, put them on a very fine grill, with a couple of books either side, but never let the bit that will be shown be on top.

I did enter a RL comp years ago (you know, where the taste actually matters...) and won, the otehr entrant was a baker and wouldn't speak to me for weeks
