What sort of kitchen knives!

We're being bought kitchen knives. Don't really know what sort to ask for.

What are the all-metal ones like? Is the metal handle a gimmic, or are they very nice. I'm worrying that the larger knives will be t heavy for comfort.

A set of Sabatier. Fantastic knives. I've had mine for 20 years and wouldn't change them for the world.

We have a mixture of knives, but my favourites are by Global. They stay really sharp and are lovely to use. The handles don't get slippery, even if your hands are wet, so I think they are a bit safer too. They're not heavy at all.

Any high carbon stainless steel knife will be fine (Global, Wusthof and the like) as long as they remain sharp.

I have wusthof and am very happy. I also own a diamond sharpener and a sharpening rod which ensures that I always have sharp edges.

I have had my Sabatier set in a block for 23 years and like solo would not swap them for anything. Beware the meat cleaver though, very sharp!!!!

Sabatiers are fantastic, unfortunately I don't have any but I used to use them at my old job and loved them.
I was a tad tempted to take them with me when I left but figured that would be a bad thing to do

I use the sharpening rod before each use, and sharpen with the diamond every 3-4 months or so.

I can't remember the last time I sharpened mine...it has to be over 18 months ago!!! they don't blunt. I have a block of 5 and tend to use 3 of them all the time.
