I am taking notes, but I am doing chicken this week, always crap at roast beef and it seems such a waste. I want melt in the mouth beutiful tender beef, not chewy stuff.

I did a roast beef joint last yr first cooked in cider then finished off in the oven, it was heavenly!

I preheat the oven to gm 9 for about 20 mins then put beef joint in for about 20 mins, then turn down to gm4 for remainder of the time (approx 40 mins) Never fails.

I'm a big fan of slow cooking beef, makes it very tender. I'd cook for 3 hours at about 180c and pour a little oil over it at beginning.

I've done briskett in the slow cooker and that was sooooo tender you couldn't carve it it just fell apart

In the slow cooker I do it from 9am - til 6pm
