what to do with potatoes

im really not a potato person, unless its chips. but i have about 1.5kg in the cupboard and i want to use them up. hate throwing food away and im trying to go the week with whats in my cupboards instead of buying more stuff (money's tight) has anybody got suggestions for what i can make that might endear me to them a bit more so that i dont end up throwing them out. chips will be fine a few nights but i dont want to be eating them every night. any help greatly appreciated.

shepherd pie or cottage pie...a real favourite with mine and you can use loads of potatos

Jacket potatos done in the microwave for economy. Served with sunflower marg and grated cheese, or baked beans, or tuna fish?

If money's tight, this is a dish I used to make a lot as a student:

Slice potatoes (don't peel them unless you really hate the peel)

Then layer them in a casserole dish with whatever veg you have to hand - onion is pretty important, garlic is good - otherwise, whatever you have. Season each layer as you go with salt and black pepper.

Then pour over some chicken/veg stock, or a can of condensed mushroom or celery soup, with a bit of extra water/milk.

Cover and bake in the oven for about an hour till the potato is tender. (Or you could do this in the microwave on high for about 15 minutes - just make sure it doesn't boil over). Uncover and sprinkle some grated cheese on top and then cook until the cheese has browned.

brilliant link reluctantincubator will be saving that. am going now to do baked potatoes with beans. just a quickie tonight cause im hungry, but will do meal plan for rest of week with other suggestions. thanks all

cut them into small cubes and par boil. Then drizzle ( generously ) with a mixture of olive oil and crushed garlic. Then roast
