How do I look after oak worktops?

I have totally forgotten what the kitchen guy said! When I came home last night they were in and oiled but I have no idea if I oil them again, rub them down, when I can use the surface etc. THey are still oily this morning so have left them alone. Thanks so much!

ISTR someone telling me once a day for a week, once a week for a month, once a month for a year, then every 6-12 months. I think the guidance given in that page re beading of water is perhaps more realistic/easier to spot.
