what to make for lunch - good friend coming round (not sure if this is the right place!!)

HI, have a good friend coming for lunch, i want to make something really nice but just can't think, don't want to do a quiche as she made one for me last time i saw her so wanted to do something bit different, sandwhiches and soup seem bit boring!!! if anyone can inspire me that would be brilliant.

Chilli beef nachos, sour cream and salad...yum!

risotto. uses one pot and you can throw almost any veg in - add creme fraiche and parmesan before serving. Lovely on a cold day.

spanakopita is a really nice dish, you could have it with a nice leafy salad. the recipies suggests a tomatoe salad. HTH
