New kitchen knives

I need to replace most of my knives and was looking for recommendations please. I'd like ones that don't need resharpening too often if possible, easy to handle and hopefully last. I read somewhere that Japanese knives are really good. Happy to pay for quality then I can replace them as and when rather than in one go.

I have a Zyliss Comfort Pro Santoku knife and have been really pleased with it. Bought as a stop gap but nicely weighted and very sharp. Currently half price on Ocado.

I can’t remember where I got my Santoku knife, but I do remember most of the rest. I have that colourful carbon set from Amazon. Victorinox or similar. Cheap but brilliant.
