I am often out most days until about 4:30 so they seem an ideal way to help get meals organised in advance.

I know i can do chicken caserole/spag bol etc but what other tasty dishes do you prepare in them?

i don't want to buy it and only use it twice a year.

Tried a roast chicken in there yesterday, got the recipe off the internet, so was a bit worried, but worked out fine. Put chicken in and cook on slow all day, voila

this is a GORGEOUS one!!!

Lamb with Sundried Tomato Pesto

2 x lamb loin steaks per person (average 6/8)
800g of plum tomatoes
1 level tablespoon of tomato puree
2 large tablespoons of sundried tomato pesto
4 beef stock cubes - crumbled
medium glass of red wine
half a medium glass of dry sherry
pinch of thyme

Fry off the lamb and put in cooker
add rest of ingredient to the pan and bring to boil then put in slow cooker
Cook on low for 8 hours

ENJOY!!

I make a nice tomato soup in my slow cooker.

It makes an enormous batch so there is plenty to freeze.

A few tins of tomatos, or a bunch of fresh ones.

2 chopped onions

garlic

a tin of chickpeas

fresh spinach

season with herbs (I like lots of oregano)

salt, pepper

Cook on low for 4-6 hours and then puree if you like. I think it is nicer pureed.

I also use this soup as a base for making my own curry sauce. I puree it with curry powder and cumin and it turns out lovely.

Chili is nice and easy in the slow cooker as wee.
