Weekly food shop help me!

I'm soooo bored with buying the same old food every week. I'd like to go meat free for two days but I'm really stuck on any inspiration.
Tell me what's on your shopping list please, hopefully it'll galvanise me into action.
We eat anything really, except offal 🤢

Lots of soup on my list. We both only eat one meal a day, I like mine to be soup. Oh HAD STeak pie and Dauphinous potatoes tonight. Other times I have the Tesco perfectly balanced meals with extra veg.

@Doggymummar soup is a good call actually. Easy to keep and can bulk it out with nice bread/cheese etc. thank you

This week:
Veg chilli (sweet potatoes, courgettes, carrots, peppers and beans)
Mackerel and leek stew (easy, leeks, potatoes, smoked mackerel in a thin white sauce + herbs)
Lentil dhal + onion bhaji
Sausage and butternut squash pasta (squeeze sausages out of skins, break up, fry with some butter, wine, roast squash with whatever (chilli, garlic) mix with sausage, cooked pasta and top with cheese
Salmon teriyaki with Bok choy and rice

Feeling lazy today, I picked up a reduced Thai chicken soup in M&S. Really delicious, and thought with a pack of ready rice in it could be even better.

I've got loads of eggs so will be having omelettes tomorrow, and pork and red pepper goulash later in week.

This seems a bit random but I use CHATAI to decide for me I ask for a 3 day british (or whatever Nationality) dinner meal plan with shopping list ! It's super helpful! It gives breakfast lunch ideas to u can ask for full 3 meal day menu with shopping list , I love it!

The sausage and mash pie, the cowboy pie with waffles and the chicken/bacon mash one are all great

If you have butternut squash, chickpeas, green lentils and sweet potato and a good selection of spices it makes veggie meals easy.

I have lots of tins of beans and lentils in the cupboard and it helps with veggie meals.

We recently discovered smash tacos and the kids loved them! Not veggie sorry, but very easy.

@jocktamsonsbairn its v easy. Cut potatoes into bite sized chunks and boil until just cooked. Fry leeks in butter, set aside snd used the same pan to make a thin white sauce (flour, butter, milk). Add pot, leeks and crumble cooked smoked mackerel in. Add garlic and parsley, warm through. Comfort food!

One easy way of going meat free is just to substitute veggie mince or veggie sausages for the meat version - bangers and mash with veggie gravy (granules), veggie Shepherd's pie, veggie chilli etc.

My east go to for meat free is thick cut peppers, onion wedges and potatoes in the oven.

When it's all just crispy add crumbled feta and drizzle honey and put back in for 5-10minutes.

Can add chicken thighs too for a meat option

How are you finding the one meal a day? We eat 2 meals a day, not sure I could get down to 1!

Go to veggie meals at our house are:

Aubergine madras (a slimming world recipe) with frozen parathas

Vivera shwarma kebab on wraps with lettuce, onion, tomato and lots of garlic mayo/sriracha

Linda McCartney shredded duck with Chinese pancakes and hoisin, cucumber, spring onion

Halloumi and avocado on part baked ciabatta rolls. Even better with green pesto and chilli jam!
