What to do with 3 aubergines

I've been gifted some huge, gorgeous aubergines but no idea what to make with them..

Any ideas????

That was the first parmigiana recipe I googled by the way. I'm not veggie so I'd be using the standard versions of the cheeses.

Juggle them.

Cut in half, score the inside flesh and rub with wasabi, soy and honey. Roast for about 1/2 hour. So tasty.

Throw them in the bin.🤑

Or teach yourself to juggle.

Fried then simmered with tomato sauce and garlicky yoghurt and chickpeas - not spicy, it's an Afghan dish called Borani banjan
Cut in fingers and breaded and fried like chips
