Help, I tried cooking red cabbage and it looks blue, where did I go wrong??

This is probably totally wrong but did you put a lid on it whilst it was boiling? I know this can affect the colour of green veg so it's best to leave the lid off for them, maybe it's the same for red cabbage.

isaidhohoho · 28/12/2007 12:49

it can change; prob cooked too long. it stays red best when cooked quickly.

glucose · 28/12/2007 12:50

Yes I had the lid on as I was steaming it in a little water like I do most greens and I thought i was energy saving by having lid on?!
will try without lid next time
thanks

also probably overcooked, i was just sort of wondering if i was supposed to add something to the water

I've cooked white and red cabbage in the pan together (boiled) and it ALL went blue! Rather disconcerting really

I have no idea - possibly overcooked.

glucose · 29/12/2007 08:27

were you hoping for pink? i will stick to green from now on, i keep finding tell tale blue stains splashed about the kitchen

en.wikipedia.org/wiki/Red_cabbage
Dont know if this helps explain it .......................

dingdongmerrilyonFLIER · 29/12/2007 08:46

Its got to be cooked with something acidic otherwise it urns blue.

I've got a nice recipe that I used for christmas day, if you'd like it?

JackieNoel · 29/12/2007 08:48

Add a bit of vinegar - should help.

JackieNoel · 29/12/2007 08:48

(and a cooking apple).

glucose · 29/12/2007 08:51

thanks lottie, brilliant
i can now energy save with my lid on, and demonstrate pH within the kitchen

The best way to cook red cabbage is long and slow with apple, vinegar and sugar.

pollypumpkin · 29/12/2007 19:51

also, braise it in oven (covered) for an hour or so, rather than boil .
