I've got a 2.6kg leg of lamb....

.... I'd like to put it in my (conventional, non fan) oven at 8am, go to church, and take it out to rest at 12ish.

I'll be home 11.30ish so could fiddle with it / remove foil etc at that point....

Is this possible? What temperature?

That's an awfully long time for a 2.6kg leg of lamb isn't it? I cooked a slightly larger one for two and a half hours the other day. I did it on 180.

Legs are best done at normal speed unlike shoulder which is fattier...and does best slow cooked on a low temp.

I slow roast leg of lamb - at 160/170 for 4-5 hours, uncovered for one of them. Sit it on quartered onion and halved head of garlic, pour 2 cups of beef stock and one of water in roasting dish. Strain juices and use to make gravy, shred/pull apart lamb. Did one earlier today exactly like that for Easter lunch. Put it on at 7am, ate at 1pm.
