Please recommend me a wok

My husband has asked for a new wok for Christmas and I'm looking for some recommendations.

His top criteria are:

  • must heat up quickly
  • must be dishwasher proof

I've just done a bit of research and it looks as if carbon steel is the best for heating up quickly, but is not at all dishwasher-friendly. Boo.

Does anyone have any recommendations?

I think the lack of responses are supporting your research. Woks need very high temperatures to cook efficiently and so carbon steel or other plain metal is best. Because dishwasher detergents contain abrasives they will rust a metal wok very quickly.

A good carbon steel wok needs seasoning when you first buy it and after that it won’t need ‘washing up’ in the traditional sense. Instead you clean it by scouring it with salt. That removes any food residue. Once done I shake the slat into the bin and wipe with a kitchen towel moistened with a little bit of cooking oil to remove any residual salt and then heat to dry. Used like this a wok will never rust and will develop a non stick patina.

I’ve worked out this regime over many years. I started with a so called non stick wok but the high temps destroyed the non stick. Then I moved to carbon steel but I threw many woks away because I used to wash them normally and eventually they would rust. Luckily I live near a branch of Wing Yip where woks are cheap and easily available! My current wok has been going strong for about 9 years and is as good as ever.
