Preserving - bored with apple chutney!

So we are about to have a glut of pears, and there is an elderly apple tree up the lane from us dropping windfalls by the pound.
What do other people do with their excess fruit? I've been making chutney for the last couple of years but I'm a bit bored with the same old....

Stew it and freeze it so you always have pie filling?

Make pie/crumble fillings and freeze

Make applesauce in preserving jars

Chopped frozen fresh apple to go in porridge in winter

Get a dehydrator and make apple chips/crisps for snacks or to add to muesli or granola

Juicer - fresh apple juice - get into cider or perry making!

Liking these ideas.... to be honest the freezer was going to be last posrt of call because there are literally kilos of fruit, and I'll end up filling the freezers with fruit (and not useful things like sausages and ice cream!)
But I hadn't thought of making readymade pie filling, just chopping it up and chucking it in!

There’s a dry Indian chutney called chhundo. It’s basically dried spicy apple and can be used as filling in all types of savoury pastry.

Sri Lankan spiced apple curry is also lush.

I had two carrier bags of apples given to me, I made a litre of apple chunks in light syrup (2 jars), a litre of apple sauce (2 jars) and a litre of spiced apple chutney (4 jars). This is the first year I've tried bottling/canning fruit rather than sticking it in the freezer, the freezer has been full since March and I can't spare the space this year for fruit and berries.

The other option is to swap them for produce that someone else is having a glut of, maybe plums, courgettes or peppers.
