Beetroot - What on earth do I do with it?

Just had my first box delivery of vegetables - it was an organic baby weaning box, and I've 3 beetroots in it.

How do I deal with them? Can you feed them to 7 month old baby? What sort of cooking do they require? Help!

I've requested not to have it in my box again.....

I love beetroot. I roast it with other root veg. Or puree it with potato and soured cream. Heavenly! Just don't panic when poo comes out a bit reddish...

Hi schizaj, these are so messy, some people use gloves to handle them. You need to cut tops and bottoms off and peel them then dice and boil them. They can make mash or go in a soup. Not sure if baby friendly or not, but they turn adult poo red so be warned.

It's good boiled in salads with potatoes, hard boiled eggs, nice in borch 9beetroot soup eaten in Poland, Ukrain, Russia, nice cut in circles among other things for tea, raosted. Beetroot is supose to be very good for your digestion.

Nicer roast than boiled IMO.

And beetroot puree is a gorgeous pink, which my children love.

scrub (gently) without breaking the skin. wrap in foil and roast for at least an hour. peel as hot as you can bear and serve with butter or sour cream. or chop in salad (puy lentils, watercress and roasted tomatoes is nice)

yes they are baby friendly. Microwave with a little water in a semi sealed dish (ie just a little hiole to let water escape a bit like microwave steaming) for about 19 mins depending on size. Peel and cut the tops off AFTER cooking not before.

Fresh beetroot is delicious and sweet nothing like rubbishy vinegary stuff.

Lovely in a sandwich with cheese (particularly goats cheese or good old Dairylea!) and mayo. Or for baby mash into potato.

peel, cut if needed into golf ball sizes, place onto a large piece of foil, add herbs, balsamic vinegar (3-4 tablespoons), same of olive oil, garlic crushed. Wrap up and seal. place in oven for an hour. delicious.

At weaning, my DS loved beetroot puree and I mixed it with mashed banana and avocado. Tasted yummy.

Also lovely roasted with baby carrots.

carrot/beetroot/seed salad, maybe not for a baby but honestly tis gorgeous

Great thanks guys! Love the sound of the roasted version. Think i'll do a couple for us and maybe puree one and add to the banana, avocado or other veg to dilute the pink poo.

I do like the idea of the beetroot cake tho, I had a friend who used to make a strange but nice corgette cake

I suppose its no different in theory to carrot as beetroot like carrot is quite sweet
