Sunday roast and use by date

Ok so just returned from supermarket with lovely roast lamb leg for Sunday. Planning to cook on Sun eat leftovers on Monday. However now noticed the use by date is 11th (Sunday). WWY?. ShallI I freeze it so we can still eat the leftovers on Monday? Annoyed as it was £14 and too big to eat in one day!

You need to cook it by midnight Sunday. Once it's cooked the use by date is irrelevant. Is usually use leftovers by Wednesday dinner

Mmmm ...roast lamb! I think it should be OK, personally I would cook and double check temp with a meat thermometer on the Sunday, then rest it. I normally aim for 66C for Med, then rest.

You should be fine for leftovers on Monday.

The use by date will have a margin of error built in but the PP are correct - cooking the meat means the left overs can be saved for a couple of days (cooking kills the bugs / arrests the going off process)

It should be cooked by the date shown. Leftovers are then ok for a few extra days
