can anyone give me any ideas for more vegi meals We have recently been eating less and less meat and tbh prefer it butI need some new ideas Thanks!

Slice and fry aubergine in olive oil
peel (if you want)and thinly slice some potatoes, put them in an oven dish with some milk and cook until tender.
Make tomato sauce (tin tom s, garlic, pesto, onion, tom puree, basil)
Grate cheese.
Then layer it all
Tom sauce, aubergine, sliced potatoes, cheese, a couple of times over in an oven dish, finishing with cheese. Cook in oven 200 degress until melted and lovely on top.

oh and soup

soup is the easiest vegetarian dish to make

can be very filling

easy to make and freeze

and everyone likes it

cheap too

Bean Goulash.

Gently fry chopped onion in olive oil til soft.

Add 2 teaspoons paprika and 1/2 tsp chili powder.

Cook for a minute.

Add two tins of chopped toms and tin each of rinsed kidney and butter beans.

Heat through until thick and glossy. season to taste.

We eat this with hunks of bread. Yum.

posted this loads of time before but it's very easy and nice!

Chickpea Curry

1 large onion, chopped
1 1/2 tbsp vegetable oil
2 garlic cloves,crushed
1/2 tsp chilli powder
1 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp ground ginger
1 x 400g can chopped tomatoes
1 tbsp tomato puree
2 x 400g can chickpeas
450ml vegetable stock (made with stock cube)

Fry onion in oil until soft. Add garlic and spices and cook for 4-5 mins over medium heat.
Add remaining ingredients and bring to boil, then cover and simmer for 1hr.

Tastes much better made in the morning and heated up for evening and serve with rice. I also like a bit of mango chutney.
This recipe says serves 4

Leeks in cheese sauce (boiled leeks, baked in sauce til crispy on top)
Wish wish wish anyone else in my family would eat this!
