Defosted too much chicken - help

We bought some really really fresh (virtually still clucking) lovely chicken breasts from our local farm. I froze them the same day (Sat and took them out to defrost yest. Once I started chopping one I reaslised that the size of one of these things is comparable to 3 supermarket ones, hence I now have way too many!! I'll be doing chicken again tonight, but realistically how long can they now stay in the fridge til used? I realise I can't refreeze, but if I were to cook them say in a curry - could I freeze and defrost then? Sorry for being an idiot, I'm not really used to freezing etc. Generally food doesn't last long enough in our house, but seriously you should see the size of these things!!!

I think you should probably use the chicken up within a couple of days, but yes, you can cook a chicken dish (like a casserole or curry) then re-freeze.
