freezer questions - cheese sauce; and pre-jam fruit

Does anyone know if you can freeze cheese sauce (the sort made with a roux, and milk) or if it will go horrible?

also - can you freeze damsons before you get around to making jam or does it not taste so good at the end?

Yes to cheese sauce. I make batches for the kids and just heat in microwave to do quick mac and cheese.
Not sure on damsons but my OH freezes other fruit such as berries and sloes to make jam and gin with no problem.

I think it's yes to both. I freeze cheese sauce often and it's fine. Soft fruit goes 'mushy' when it's been frozen, but that shouldn't be a problem if you're making jam with it. Not sure if stones should be removed first - no idea on that.

thanks! Actually donkir you have just reminded me that I used to make tons of little pots of cauliflower cheese when they were babies so I have actually frozen cheese sauce in the past ... dur. thanks!

I regularly freeze both and haven't had any problems.
Depends on what the fruit will be used for as to whether we remove the stones - if it's for jam, stewing, random as-yet-unknown usage then I would take out the stones, if it's for jelly (and we make and eat A LOT of hedgerow Jelly :)) I don't bother as you sieve it once it's cooked.
