cleaning copper

How do I do this without using some nasty chemical?

and no, I don't have large country kitchen complete with beams, aga and copper pans hanging from between dried hops!!!!

According to this , lemon juice mixed with salt, rub on, polish off with dry cloth.

or

'Copper can be polished using a cloth dipped in white vinegar or lemon juice with salt dissolved in it; just rinse with water when you're done.'

Apparently brown sauce does wonders for copper. Get a cheap bottle from the supermarket, slather it on, leave for 30 mins then wipe off & polish.
