Bread Pudding.

Please tell me how to make this, do i use lard? Got a recipe that includes lard but not sure about this? Confused

I think it used to be made with lard, traditionally - as it was a recipe to use up old/going-off stuff. Eg in the war, and after, during rationing, I think bread pudding tended to be made with lard but less dried fruit.
I'd not make it with lard; I'd use butter. But then I am veggie!

One way of doing it is to take the leftover bread, tear into chunks, sprinkle over some raisins, then pour over 1 pint milk with 2 eggs beaten into it along with 1-2 tsp sugar. Leave the bread to absorb the mixture and then put into the oven for about 20 minutes covered with a bit of foil so the raisins don't burn. Brown for the last 5 minutes.

This is my recipe:

12oz bread soaked in at least .5 pint of milk - I like mix of white/brown/speciality bread like walnut cut into pieces
2 eggs
9 oz mixed fruit
5oz dark brown sugar
2oz melted butter/marg
mixed spice
Mash everything except fruit then add that and mixed spice cook about an hour at 180 degrees
It's been ages since I made one and as everyone loves it I better let some bread go stale!

If you're worried about using lard from a health point of view, then bear in mind that it's actually lower in saturated fat than butter Shock
