Please can you give me any suggestions for helping me to control the small plastic stuff that is seeping out of its current box - impossible to locate the tiny pieces unless I kneel or tread on it!!!

A suitably sized tub for the bigger pieces, baseplates etc; a set of plastic drawers for the small/specialised bits. The sort of things you might use in an office or workshop for bits&bobs.

Giant circle of fabric (old sheet?). Generous hem round the edge, feed a string through the hem, tie the ends of the string together. Tip Lego onto circle, end of play make sure any wayward bits are chucked back on circle, hold knot of string and gently push away the fabric till you have a big bag of Lego to hang on a hook till next play time.

lego storage solutions
Im willing to bet "lego storage solutions" is one of the most asked questions on MN :)

I have two boxes one for big bits, one for small.
If it comes to the point where the bits dont all fit, I may suggest we have too much. :)
