Does anyone know a recipe for lemon cheesecake that doesn't involve gelatine?

I know one for a lemon mascapone cheesecake, if you want that? It's dead easy and will take about half hour to make!

baked cheesecakes don't use gelatine

This ^^ is piss easy. Ignore all ingredients from 1tsp ground ginger down, and chuck in the zest of your half a lemon. I would whisk it for fluffiness if I had an electric one, and line the tin with a couple of layers of cling film so it lifts straight out - half an hour in the freezer before serving helps with that too Wink

They all look delicious! I like the idea of using ginger nuts for the base. My mouth is watering and I can't wait to have a go at one of these tomorrow. Thanks everyone.
