Pork Tenderloin Fillet Recipe Help!

Has anybody got any tried & trusted recipes using this cut? I've retrieved 2 fillets from the freezer & don't know what to do with them as I rarely buy pork. I'd kind of prefer to cook it whole & slice afterwards but will entertain making medallions.

Can't go anywhere for more ingredients this afternoon so am limited to what I have in the fridge/cupboards - help please! Grin

Chopped sage, lemon zest, black pepper and mascarpone cheese (or Philly) mixed together. Make 3/4 cuts down the fillet, about an inch apart. Stuff each cut with a little of the cheese mix. Roll fillet in slices Parma ham or bacon. Shove in the oven for 40 mins.

While its resting, heat up the remaining cheese mix in a pan with some lemon juice and the meat juices to make a sauce.

Lovely with green beans and spuds!

Chinese pork marinated in soy sauce, mirin and five spice is delicious.

butterfly the fillet and stuff with sage and onion stuffing, roll up, secure with skewers and roast. Serve with gravy, spuds and veg.

I did this with pork chops (boneless) last week- delicious- pork chops laid out on a lasagne dish. Sliced cooking apples laid on top. Then red onions and mushrooms.add stock(from cube) and cider. Oven 180 for bout 45-60 mins
