Advice needed re cooking a curry from scratch - lemongrass & lime leaves...

I had a Thai green chicken Charlie Bigham one from Waitrose and it was de-lish-us really, fresh flavours, & I want to re-create it from scratch. It came as chicken and sauce to be fried separately. Had it a couple of weeks ago & these are the ingredients on the box. They are obv in weight so no indication of 'throw in the pan' order.
chicken
coconut milk
green pepper
onion
water
veg oil
fresh coriander
toasted peanuts
lemon juice
fresh green chilli
fish sauce
lemongrass
lime leaves
cornflour
ginger puree
sugar
salt &pepper
ground ginger & ground coriander
turmeric
dried chilli

So, my question is: I've never used either lemongrass or lime leaves before. When do I add them & how much for 4 people?

Also, DH hates ground coriander. Should I add a bit of cumin instead, or just forget it?
