how can i use up egg yolk?

hello, i'm about to make some mint creams which involve egg white, what can i do with the egg yolk. the last time i used just the white i left the yolk in the fridge till it went hard and unusable.

this is not satisfactory. what can i do with it? and can i freeze it?

I don't know if they freeze, but how about adding some milk and having omelette for lunch?

Zabaglione. Just whisk with caster sugar and some sherry or other alcohol. Yum.

make shortcrust pastry, then you can freeze that
