Quick healthy meal idea's

Am due dc2 very soon and I don't like cooking at the best of times but I do it because I have a toddler to feed.

With dp working away during the week I need some quick healthy meal idea's for ds1 and myself that I can make whilst juggling a newborn.

I don't have the freezer space to batch cook and freeze so that's out!

Can you help?

Baked potatoes (tuna, beans, cheese,ham, salad...)

Pasta and sauce (tomato, cheese, pesto, veg ..)

Homemade Soup and a roll

Eggs - boiled / scrambled / omelette/fernch toast

Pancakes with cheese and veggies in

Home made pizza with extra veg

Fishcakes (recipe www.ivillage.co.uk/food/tools/recipefinder/display_recipe/0,,4286,00.html, never tried it though)

tuna, pasta and sweetcorn.

Chicken drumsticks, jacket potato and beans.

Baked bean omelettes.

Sausage cassarole (Sausages, tin of tomatoes, onions) with rice

simple rice boiled together with bits of potato, carrots and peas. Try warm mixed with greek yoghurt

chippolata sausages as a snack

avocados are a super food, good for snack or to top up meal

Loads of idea's to keep me sane (ish) for a while.

At the moment he's eating a lot of the same meal fishcakes (fresh from fish counter) with boiled/mashed potatoes and veg. I have the timing perfect so it's all ready to dish up at the exact same time. Which is more than I can say for every other meal I try to cook. Blush

Needed more ideas though so thank-you.
