What to replace this light with?

We have this very 90s esque flourescent strip light in our kitchen.

Want to replace it (or at least the bulb) due to the mercury risks and because the brightness gives me a headache, but ideally the whole thing as its very dated and ugly looking, and think they are bright by default even LED ones.
DH wants something reasonably bright still to see when cooking.

We do rent so can't do anything too drastic, and also don't want to spend loads.

Advice welcomed on a solution pls.....

I have dimmable spotlights. Would that work?

Do quite like the idea of spotlights, and dimmable would be useful.
Did you get them installed yourself, if so do you recall cost pls?
Would have to run that past landlord but if we are paying for it and modernising the home I don't see them having a major issue hopefully.
