40th birthday any hidden cheap gems?

Partner is 40 in July and looking for any hidden gems?
We have a 4 year old that I’m reluctant to leave for more than one night.
Happy to take child with us, and even grandparents to look after child if a distance and a good restaurant.

any quirky hotels? Or great views?
we live in the countryside so no shepherd huts or farm stays type thing.
Just looking for something a bit different that isn’t crazy price is that’s possible!

How about Brighton? This is a lovely hotel and not too spendy.
There are also apartments if you wanted to make a weekend of it as a family.
