Where can I stay in Europe that allows me day trips to other locations ? I have from
Thurs - Monday but fancy not being stuck in one location ie time with a day trip to Capri/Pompeii.

Munich, castles easy to visit and close to France (Strasbourg), Switzerland (Basel), Austria (Salzburg). You could even fly into one place and out of the other.

Great suggestions and thanks JDM625 for your comprehensive response

Marseille. Easy to get there by train, too (3 hours from Paris on the TGV, so let's say 6-7 hrs from St Pancras).

Easy day trips to Cassis, Avignon, Arles, etc.

I'm thinking of a trip to Bologna with day trips to Florence and Ravenna

You have to love the train "corridor" that stretches from Milan to Venice, trains cheap, regular, and nice. Airports being Milan (Linate the easiest unless you are going to Lake Como, then MXP) Bergamo old town (BGY), Verona - airport is quite far out, then Venice (VCE not treviso) but expensive, but bus easy enough. With the fabulous stop off points of Milan, Bergamo, Breschia (not as good as others, but nice enough), then Lake Garda (Peschiera del Garda) then Verona (just 20 mins by train) then Padua (and Abano Terme if you are prepared to take bus and like hot springs) then Venice. Hotels are quite expensive, but not unbearable. Plenty of Eurocamps. Flights from the UK are cheap. All fairly touristy, but still worth doing it. Food UK prices depending where you eat. x

Rome - take the train to Ostia Antica.
Bologna - take the train to Venice.

Bologna. Day trips to Ferrara, Modena, Ravenna, Parma, and further if you take the express train service. It’s a great city in its own right but has excellent links elsewhere, eg Venice, Milan and Padua.

Alicante. Short flight, own airport, various interesting towns and nature close by, plus Valencia is 2 hours on the train.

Amazing replies, thank you so much. Too many to choose from, but booked Rome with possibly day trip elsewhere. Thanks again all, much appreciated
