Algarve between Christmas and New Year

I’m looking for somewhere to go between Christmas and new year.
It would be just for me and my elderly mother. Kids will be with their dad.
I would like it to be warm but it doesn’t need to be scorching hot.
We would go all inclusive and so far the one that ticks the most boxes is a hotel near Albufiera. We would like to be able to wander about and have a glass of wine or a coffee but it doesn’t need to be super lively.
Has anyone been in this area at that time of year?
Canaries would be another option but we’ve been so many times we’d like to try something different!
Madiera is out unfortunately due to flights.

Yes it’s very quiet with most of the strip closed which we didn’t mind at all but plenty of places in the old town etc open and the weather was pleasant

I have gone onto the 2nd Jan for the last three years. It is quiet but really lovely. We did see rain and it was cold at night. I would recommend a hotel with an indoor pool.

I’ve found the NAU Sao Rafael that seems to have one
