Mumcation - where to go

I’ve asked for a Mumcation for my birthday in March. I’m now looking for a place to go. Any suggestions welcome including hotel recs.

Requirements

City easy accessible by train from London
cathedral city so I can go to Sunday service on my birthday
lots to see and do / places to walk
ideally a pool or gym in the hotel.
UK only.

Peterborough’s a cathedral city. Easy to get to from London.

The cathedral looks interesting, Katharine of Aragon is buried there. The rest of the place looks like a bit of a dive though and seems to regularly hit the top ten least desirable places to live in the UK. I'd be interested to hear if there are any other parts of Peterborough that would make it worth spending a few days in.

Durham or York 💯

Bath - gets busy and full of tourists.
York- gets busy but there is Betty's tea shop etc.
Durham - lots of walks on the river bank and around the cathedral. Castle is open some days.

Marriot in Durham has a pool. Hotel is very central. Radisson Hotel is on the river.

Peterborough is a dump. The town centre is just awful.
