Relaxing solo holiday - any recommendations?

DH doesn't like holidays and most of my friends have young children, so it looks like if I want a holiday I'll need to do it alone.

Ideally somewhere warm with a pool, but with a nice town or village nearby. I'm thinking self catering, having breakfast and dinner in the apartment and maybe going out for lunch. Ideally somewhere easily accessible by public transport.

I'm tired and stressed and just need to recharge, get some sun, eat some nice food and sleep a lot.

Anyone been on a similar type of solo holiday? I'd love to hear your recommendations.

Fly to Barcelona. Train to Tamarit. Stay here. If you want an apartment instead, look at Europservice's website. Eat seafood on the beach. Do yoga with Al Natur. Hike the coast path. Get the train to Tarragona to explore the ancient ruins, go to the spa and eat tapas. You'll be happy as anything!
