Easy cycling holiday ideas

I'd like to go on a short, easy cycling holiday with my 11 year old son.
What I have in mind is somewhere abroad, probably northern Europe, that we can fly or Eurostar to.
A flat-ish, off-road trail would be ideal.
We wouldn't want to go too far each day and would need to find places to stay.
We could turn back but the very best option would be circular or something that ends up somewhere we can get home from.
I know this is narrow and specific and I don't know how to start looking. If anyone had a vague suggestion I could research from there.

How long are you thinking?
Vienna to Budapest along the Danube? Or a smaller section.
Canal du midi in France? Or along the Loire or Dordogne? Or anywhere in France really.
Or take bikes on the ferry to Holland? It's quite fun disembarking at the front of all the cars.

Look at the routes by cycling for softies or similar.

Netherlands. You can take the ferry to the Hook of Holland and then cycle along the seashore up to Den Hague, Haarlem, do a loop via Amsterdam and then down via Leiden. Or just down via Leiden bypassing A’dam altogether.
All along that coast there are eurocamps, dirt cheap the second half of August, they go back to school by then.

I wonder about Bruges towards Amsterdam but not going all the way. If we could get to somewhere where we could catch a train to Amsterdam that could work well.
I really only want about 4 days, 10-15 miles a day

Year ago my partner and I did dieppe to Paris.

You take your own bikes and get the ferry from new haven to dieppe. And then you can bring the bikes back.

Fairly flat and we did 30/40 miles a day and I think 4 days. There are websites decidcated to it

There are French holidays where you cycle from hotel to hotel on set routes and they take your bags.

They're great.
We've done 2 cycling and 1 walking

Probably available in other counties too

we did the Loire valley a few years ago, pre covid, but hotel prices were reasonable, you could buy lovely picnics and the cycling was all on cycle paths well signposted.loads of families. Tours was a lovely city. Highly recommend.

we used Explore to sort it for us, but it would be easy to do yourself.

we also did a bit of northern Croatia near Rovinj. Along the coast.

I'm thinking g we'll hire bikes but that probably means we need a circular route or to go there and back.
