Just that. But not London, Brighton, Bristol, Exeter, Oxford or Cambridge 😬

Preferably within 3 hours of the midlands with interesting some things to see.

Asking here because MN is so good for holiday suggestions!

Good, not Stratford-upon-Avon. Rammed with tourists and language schools

This is what @Hobbesmanc was talking about.
Chester is beautiful. We were there yesterday. We love La Fattoria, Artezzan and the market for food. Depending on when you are going the new market hall may be open (there are a couple of places open on it already). Lots of coffee shops and cute restaurants to try.
The Storyhouse theatre is great. Lots of great bars - Prohibition is brilliant if you can find it! You have to knock on the door to get in. Great cocktails.

Peak district is gorgeous.
Edinburgh might be doable in 3 hours if you can get the train - depending on where you are in the midlands.
Or York?
