Ideas for an October/November trip - relaxing + adventure

Would love some inspiration.
We’re two adults - we usually go on quite adventurous trips and travel around an area over 3 weeks or so. Always book/plan it ourselves.
This year we can take off around 3 weeks end of October/early November and want to do a bit of travelling but also some down time on a beach (we need a de-stress!). So thinking a week on a beach then something more adventurous for a couple of weeks.
Somewhere like Mexico/Costa Rica came to mind but it’s not the best weather then. Or we thought maybe SE Asia - we’ve been to Thailand but Indonesia might appeal, although again need to think about the weather.
It doesn’t have to be a beach - could be something like a lakeside resort, or somewhere pretty in the mountains.
Budget not too much of an issue.
Any ideas would be great!

Lots of rainy seasons at that time so you'd need to check on that but:
Vietnam/Laos?
Nepal
India
Sri Lanka

We did something similar pre-kids. We flew to Aqaba in Jordan (easyJet have direct flights from London) and stayed by the Red Sea for a week and then made our way to Amman via Petra, did some desert safaris, stayed at a Bedouin camps, Wadi Rum and the Dead Sea.

We travelled down Vietnam from Hanoi by train but only had 12 days so finished up in Hoi An in a lovely hotel while we had some made to measure clothing and shoes made while we took it easy on the beach and by the pool.
