So, from the weekend, the UK will let people with two jabs from EU countries such as Austria, Czech Republic, Slovakia, Slovenia et al come to the UK with no quarantine. They face no quarantine when they arrive or when they return.

But, we still need to quarantine if we go to Austria, Slovakia, Czech Republic, Slovenia it seems? I thought it might be reciprocated? Or perhaps this is all just political? Anyone know what is really happening or things it might change?

The number of cases of covid is way higher in the U.K. than those countries you need mentioned. It’s not political it’s just data.

Are you thinking about going on holiday - you haven't said in your OP.
My advice would be to go for a green country if you are, as they are less likely to have issues (although there are several hoops to jump through before you go and while you're there, plus a test when you return).

Austria are not admitting any British citizens currently due to Austrian law.

It's nothing to do with politics. It's how much of a risk visitors pose to a country (which varies depending on the situation in the country they are travelling from) and how much risk the country is willing to take.

Many countries see the UK as too high risk right now due, however we do not view them in the same way.

That’s fair - less political than I thought it seems. It feel like we have snatched defeat from the jaws of victory here sometimes. I need to go there to do some project work - not for holiday - so sadly I can’t just ignore the situation as we go into Autumn. The remote work has been tough and I have a feeling that cases might rise in Europe come Autumn, though don’t know anything anymore really.

You might find it's easier if you are working than just a holiday but each country needs to be checked individually... sigh. Nobody knows more, such a fluid situation!
