Help - DH big birthday trip

Hello- DH has a big birthday coming up and I really wanted to surprise him with a trip to Mexico as he's always wanted to go there. The issue I have is obviously the situation with coronavirus means going abroad might not be wise and also we have just had a baby so aren't confident going abroad so soon. I've also considered a UK overnight stay by the beach somewhere but expect these to be mostly booked up given everyone is holidaying in the UK this year. I feel really bad as I'd be upset doing nothing for my big birthday and it's also my fault as I've just been so busy with the baby I've not had time to plan anything. I want to do something special for him. Any ideas? Happy to book the trip to Mexico for maybe next year and surprise him with the tickets now as his present but baby will be walking by then so will be harder and stressful to take abroad plus lots of uncertainty re covid and having to cancel next year. Could also go for a day at the beach somewhere or a night away in the UK that doesn't involve too long a drive. Or worst case a meal somewhere nice and not too far. Baby will be with us. Any ideas? We live in Uxbridge.

Bit late replying, so appreciate this might already be sorted.

Depending on your budget it might be worth you booking with a reputable high end travel agent. DH and I had booked to go to Japan with Audley last year originally, which was shifted to this year, and now is 2022 (fingers crossed). They are the ones that deal with the cancellations, bookings, admin, checking up on rules... - the service has been incredible. Not the cheapest way to travel, but considering the pandemic it's definitely taken away any headache, also their expertise with planning the trip was great too.

Big birthday for DH this year (this month) I have booked for him and I to go to London in November to see Elton John at the O2 and overnight at the connecting Crowne Plaza... could you do something like that instead?
