Summer holiday advice for friends

I'm planning on going away with a friend who's never been before so don't want to pick somewhere shit. I'm overwhelmed by the number of places I've just looked at so think it'll be easier if I narrow it down with some actual recommendations here!

Looking to go away for 1 week to a typical shorthaul summer holiday destination like Spain, Portugal, Greece etc.

Adults only hotel if possible, but also not a rowdy or 'Brit Abroad' area.

Looking to fly in August/September

Budget is up to £300pp not including spending money, I've seen a lot of holidays for around £250 on travel agent sites but there are so many of them.

We're pretty easygoing but will want some kind of option other than sitting by the beach or pool. Especially love water parks and maybe something else like a safari trip which I've never done.

If anywhere has been somewhere as a couple or with friends that meets the above, please let me know. Thank you in advance!
