Good quality family holiday?

Hi, after a brutal start to the year for many reasons we need a holiday booked where we can all enjoy it as a family. We have enjoyed holiday village type things before but wondered if there is anything similar but different available-
Have looked at sensatori (but ££) and martinhal (too £)
Timing is just before most people’s school holidays, which helps a bit on price, so easily- mid July for a week
what we like/want is-
Accommodation with split sleeping area even if only partition divide for parents/kids
Suitable for kids 3-9
Food available/all inclusive and managing allergies (which is why HV worked well as very British and easy to explain needs)
4-5 star
Not high rise
Open on location world wide- needs to be sunny and warm in July
Not Tunisia Egypt turkey Bulgaria Dominican Republic Jamaica etc
Butget about £3k for 2 adults and 2 kids

Would rally welcome some suggestions!
We did self catering in France last year and loved it but just need to be a bit more looked after this year.
