Holiday advice with 2 young children

Looking for some advice on destinations.
Children will be 2.5year and 6months.
Would like to go abroad but no longer than a 2-2.5hour flight.
Would also like some heat... Planning on going May/June 2019.
Pool, self-catered near the sea with local restaurants ideally, although we are open to recommendations.

Ideally would like to use a company that takes a deposit so that we can pay it off over a period of time.

There are lots of resorts close to Reus Airport in Spain (Salou/La Pineda/Cambrils) Reus is 2 hours flight from Gatwick.

Any of the large package operators like First Choice, Tui, Thomas Cook and Jet2 do deposit schemes unless you book close to departure date.
