Where should we go for our summer holiday?

Very unusually, DH and I haven't booked a summer holiday yet and are struggling to come up with a place that fulfills our wishes. We are pretty well travelled having been to most European countries and quite a lot of Asia.
We like to be busy seeing different places, historical ruins, interesting buildings etc. We are happy with a day at the beach but not a week. We're ok with heat. Don't want all inclusive or a family style holiday as we haven't any children. We loved Sicily so a similar place would be wonderful.
Budget no more than £2000 per person to include everything and preferably a little less for 7 - 10 days.
What would you wise Mumsnetters recommend?

Have you been to Andalucia?

Combination of Malaga (tapas, castle, another monument, beach, Picasso museum)
Granada and Alhambra
Seville
Cordoba
Ronda
Cadiz - historical port city and beach
White villages

Easy to book independently and travel by train/coach or do an organised tour with the likes of Riviera travel or similar.

Or Lisbon?

New England? Fly into Boston and travel up through the states, a different kind of history I think and Boston is fab.

We have just come back from Slovenia and it was brilliant.

A lovely, green country - quite small but we seemed to pack loads in to or time there.

More castles than Wales - Predjama was particularly awesome.
Some spectacular show caves. I have been to show caves in the past but these were in a class of their own.
A small coastline but Piran is particularly beautiful and has a very Venetian feel.
Lovely countryside with lots of well waymarked paths if you like walking. Also quite a lot of cycle paths if that is your bag.

Oh, and the highlight for me, we went out bear watching with a local guide and we did see a bear :-)

Scandinavia, flam railway in Norway followed by a boat trip around the fjords. Iceland is great on the summer too.
Bavaria.
Montenegro.
Moscow or St Petersburg.
Swiss Alps.
Romania.
Macedonia.

For that money you could see a few places if you're happy to travel. DH and I went from Manchester to Hong Kong by train (pre kids) and stopped at some brilliant places.

Wow, thank you for your responses. we've been to some of the places listed but you've given some interesting new ones to think about. I'm particularly interested in Andalucia and will also research Slovenia as we've been to Ljubljana but nowhere else there.

Ljubljana was nice but we felt that a day there was enough. The interesting old town bit around the river is very small and you can see it all in a few hours.

There is heaps more to do in the North West where the mountains and lakes are (Bled and Bohinj) and the South West where it is the coast and the karst.

Seconding Croatia - Split is amazing, there's island hopping available, but make sure you factor in Plitvice as well.
Also the museum of broken relationships or whatever it's called in Zagreb (!)

I would agree with Corsica. I stayed in Calvin and l'isle Rousse many years ago. Magical!
