First holiday with an 8 month old!

Hi! Can anyone recommend a lovely hotel/resort within a four hour flight from Newcastle, for May time? It'd be our first holiday with our DD (who will be 11 months old) We'd ideally like something kind of higher end and very family orientated (without sounding like a dick, I'm just being honest) and for a week or so. I keep looking, but I get so bogged down in the detail I end up looking at about 62738 hotels.

We were thinking Menorca or Ibiza, not too hot but I definitely need some sun. Thanks!!

Lots of recommendations amongst friends for Martinhal resorts in Portugal for travelling with children.
We’ve been to Mark Warner hotels and they’ve been very good for children that age, less luxurious hotels but great facilities for smaller children.

I'd recommend Sensatori Resort Ibiza.
Toddlers and babies get their own multi-sensory nursery. It’s designed for little ones up to 4 years and is available seven days a week, all year round. Morning sessions start at 9.30 and afternoon sessions start at 13.30, and each one lasts three and a half hours. They can be booked in blocks of 6, 9, 10 or 13 if you’re staying for a fortnight, or 6 if you’re here for a week. They start the day after you arrive and run consecutively. Nursery sessions need to be booked in the UK because of the strict child-to-staff ratio.
There are six pools including an adults-only pool with built-in loungers, and a splash pool just for children over at The Retreat, complete with fountains and tipping buckets.
There are lots of different room options and most have a balcony. They do have family rooms but I think a cot will be accommodated in some of the other rooms too (apart from the adult only swim-up rooms obs). They also have some suites if you don't want your dc sleeping in the same room as you.
There's a big choice of restaurants and I think most will provide a high chair.
