Do budget airlines have winter sales?

Hi,
We've got our eye on a trip to Rome/Tuscany for the October break and I've found some flights. I'm just wondering if it's worth hanging off for a bit in case they are doing any Christmas/January sales.

We would be flying with two airlines - Ryanair and Vueling.
