I usually book self catering accommodation on-line and flights separately on-line with someone like bmi baby.

We went to Majorca one Easter and it was cold and wet. That was unusual though because it was in the papers. Last day was lovely. We're going to La Caleta at half term (Tenerife) this year, though last year in May I thought the pools were cold.
