The Algarve, Portugal has great weather, lovely beaches and is only 2.5 hours flight from UK + almost everyone speak English.
Plus no tme difference to UK.
Easy Jet and BA do have cheap flights depending on when you book.

If you can get your head round to flying that is.

There's a good list of holiday companies with sites in europe here If you find a nice place and then try to get a ferry crossing as close as possible to cut out the driving it should be okay.
