Does 'check-in online' through Easyjet merely mean that you have to print your Boarding Passes out before hand? Am I missing something?

Ive just doen BMI Baby and yes you go in enter your details, ie passport number, dob, you can add extras on as well such as seat choice.

then you print off your boarding passes

yes, you print your own boarding passes.
not entirely sure about easyjet, but ryanair charges a check-in fee of 40£ if you don't do the online check in beforehand or you lose your printouts...

Flew with them last week. All we had to do was print out the boarding pass and present it along with the passport.
I am not sure if Easyjet charge you if you haven't. I recall reading about a man with some ingenuity when this first became common taking a printer to the airport and charging those without a tenner or so to print them.
