Weekend/two night break, UK, just husband and I - where?!

So my brief is 2 nights (budget £600 for hotel, preferably DBB at least one night included in that budget), UK and just for my husband and I as we've offloaded the children for a weekend/midweek - either options are perfectly doable.

Where would you go in the UK and why? Cornwall out as we're off there in April en famille.
