IBS symptoms only when I eat at certain times

I have long standing IBS or similar, get bad bloating and wind every day and awful explosive diarrhoea 2-3 times per week. For full disclosure, I have some issues with my spine that are probably causing a lot of my bowel issues. I also have some food intolerances and I avoid these foods as they makes things a lot worse.

Here’s my issue: I wake up in the morning and 95% of the time it’s like my system has reset overnight: my stomach is flat and comfortable, no wind beyond what is normal, no diarrhoea. I eat breakfast and feel fine for the next few hours - no wind or major bowel issues, stomach stays flat. It doesn’t matter how much I eat for breakfast or what I eat - I am always fine until I eat lunch.

The minute I have finished my lunch, the mega bloating begins, as does the wind, and having to rush to the loo. It doesn’t matter what my lunch is or how big it is, the result is the same. I could eat the exact same food as for my breakfast and still get the issues. I then feel uncomfortable and ill until I go to bed. I rarely manage to eat in the evening beyond a small snack. If I try to eat a meal I have awful nausea and bloating and diarrhoea. It eventually settles around 10-11pm, I wake feeling fine and the cycle starts again.

Does anyone have any wisdom as to why this could be happening? I’m certain it’s not a type of food I’m eating that triggers it as it makes no difference what I eat.

Why would it only manifest as soon as I’ve eaten lunch though? If I don’t eat lunch or dinner I get no symptoms at all (although am absolutely starving obviously).
